If you have a chunk of cheddar in the fridge that’s starting to grow mold, you can most likely cut off the mold and eat the fresher parts without getting sick. That’s because cheddar is a hard cheese. However, you don’t want to do that with soft cheeses such as brie. If you see mold on any of your soft cheeses, toss them in the trash. Otherwise, you could contract listeria food poisoning.

Dairy products are at high risk of spoiling because they naturally contain bacteria. Take yogurt for example—it’s actually the product of controlled bacterial growth. Cheese is fairly similar, so you need to be careful when you eat it. Always wrap up any leftover cheese and put it in the fridge, and never eat cheese that’s past the expiration or ‘best by date.
