If you eat a lot of salads, you probably know that mixed greens like arugula, spinach, spring mix, packaged salad mix, and other leafy vegetables don’t last too long past their expiration date. Once they hit that date, they often wilt and/or develop a slimy coating. Before they are packaged, they are washed and perfectly safe to eat, but if you wait too long to eat them, they can harbor dangerous bacteria.

Always check the ‘best before’ dates before opening a package of greens, and always store them according to their storage guidelines to ensure that they stay fresh as long as possible. If you decide to keep the leafy greens in the bag, roll it down like you would a bag of chips and secure it with a clothespin or rubber band so that oxygen can’t get in the bag. An even better option is to keep them in an airtight container and eat them within two days of opening.
